Sandbaggin and savin the Farm

You sit in a chair and hold the bags while the 'filler' dumps loads in, then you heave it off to the side for the 'riders' to take it to the needed areas. You can fill twice as many bags because the bag is stable on the ground and your not moving if your sitting so the 'shoveler' doesn't miss the bag.

We filled 9,000 bags at the farm in 2 hours!

The 3 colleges from the area completely shut down to allow the students to volunteer. They were an absolute HOOT!

Today the boys and I were called to help sandbag for a relative of one of our church members in Oxbow, ND. It was so much fun to bag sand and surround the house knowing you were helping out in the name of God. The kids were plum tired by the time we were done and had mud from head to toe, but they had fun. When the end of the sand and the bags came, and the sand bag dike had been erected, we just stood back and took in all that we had accomplished....together. The farm owners were very grateful and thanked the boys 10 times over for their service. No one that young had helped bag sand or lifted the sand bags in the ‘receiving’ line before. Brandon just replied, ‘It had to be done, so we came. It’s what’s your SUPPOSED to do, right?” Tyler replied, “It was fun to play in the sand pile and ride the tractor!”

To each his own I suppose, but the sense of community was so strong. Standing 12 inches from another person for hours just handing them 40-50 lb bags of sand one after another, sweating, laughing, and touching each others hearts without even so much as a handshake. I loved it! I loved that my boys were by my side doing the very same thing. Helping people we didn’t even know battle a fight that hadn’t yet even come to full fury. God little warriors! It was a proud moment as a Mom to watch the boys work side by side with people more than twice their age and muscle mass, but yet keep on plugging as long as their was sand to move.

Continue to pray that all residents and businesses of this flooded area get the help they need and the hope they are looking for. It’s been a 24/7 fight and many are tired, pray also please that they have the endurance to keep on fighting until the floodwaters are no longer a threat to life or property.

Last week we found out that Tyler is nearsighted and needed glasses to see the chalk board. Today we went and picked them up. They are soooooooooo COOL! Of course they are green, his favorite color!
LOOK, now all the Noffze's have glasses! :)

After the Storm

We ventured out today just for a little while after yesterday's blizzard. Things looked a bit different. The snow was white, the sky was blue, and it was beautifully sunny!

First we had to make it out the front door. After looking at these drifts we decided to go through the garage to get out. The drifts were taller than we were!



Then we saw this HUGE drift climbing up the grocery store walls. The drift was almost two stories HIGH! WOW!

Blizzard Watch

The house across the street had snow drifts almost covering the windows!

All day we watched as the blizzard whirled around us. You could hear the snow pelting the siding and the tarps flapping in the wind covering the house being built next door.

Out our front windows on the porch was a particularly strong whirlwind which made the most interesting drifts. Here's the photo's of it's progression throughout the day.





The snow drift outside the window looks like a GIANT cartoon character head! It's over 5 foot tall!

Blissful Blizzard Number 2


I know I haven't written in a while, I mean really written, but life has been flying by so fast it's been hard to find the time to ponder life itself...

Today another blizzard struck the Fargo area. First the highways started to close, then the schools, then the winds picked up and nearly turned the whole world outside our house white. Churches closed, daycare's closed, stores closed, and even the hospital closed to non-emergency's.

I spent all day with a smile on my face and a skip in my step. My whole entire family was home, under the same roof at the same time. There was no meetings scheduled, no dinners to rush to, no patients to see. We played games, ate popcorn, watched movies, enjoyed two whole meals together and just talked.

Hmm, everyone said we were crazy for moving this far north in the frozen tundra, but it's days like this that make me think this is WHY we moved to Fargo. A blizzard is like having a family holiday in the middle of the winter where God shuts out the whole entire world and just allows love to flourish in it's purest form.

So, with the 5 ft snowdrift in front of the door, the beautiful white scenery blocking the view of our neighbors and the barely visible street signs...my love affair with Fargo continues. It's days like this that make me love it even more.

It's RUFF being a dog!

Yesterday I noticed that Cole wasn't putting any weight on his back leg and took a look. Apparently he had caught his nail on something and had shaved off the whole top half of the nail, leaving the 'quick' totally exposed. VERY painful I would guess when you expose it to SNOW to pee in!

The Vet couldn't see him right away so she gave him an 'E' collar and some pain meds until she could fit him in her schedule.

Cole was even LESS thrilled with the 'E' collar than the missing nail!


Never the less, her schedule opened up today and they ended up cutting several nails off and cauterizing the 'quick' all the way up the affected nails.

He's definitely NOT thrilled with having to undergo anesthesia for this little incident, but he's resting comfortably and drooling the day away.

Sundogs and Eyeballs


Have you ever seen a 'sundog'?
It looks like a gigantic iris in the sky surrounded by a huge circular rainbow. Like God's eye, just checking in to see how everything on Earth is going.

We have had quite few here in Fargo lately. It's amazing to wake up to a rainbow that lasts for such a long time on the horizon. It's really bright and nearly blinds you, but if you hold up your hand over the central 'sun' part, the rainbow gets even brighter. Remarkable, just remarkable how God's Glory reveals itself in our everyday lives!


Official Definition:
Sundogs typically, but not exclusively, appear when the sun is low, e.g. at sunrise and sunset, and the atmosphere is filled with ice crystal forming cirrus clouds, but diamond dust and ice fog can also produce them. They are often bright white patches of light looking much like the sun or a comet, and occasionally are confused with those phenomena. Sometimes they exhibit a spectrum of colours, ranging from red closest to the sun to a pale bluish tail stretching away from the sun.[1] White sundogs are caused by light reflected off of atmospheric ice crystals, while coloured sundogs are caused by light refracted through them. White sundogs are also thought to be caused by the light from the sun reflecting off of water on the ground and focusing the reflected light on the clouds above.

The ice crystals causing atmospheric phenomena are shaped as hexagonal prisms (ice Ih, e.g. with a hexagonal top and bottom and six rectangular sides). Some of these crystals are elongated, some are flat; the latter causing crisp and bright sundogs if evenly oriented with their hexagonal ends aligned horizontally, while the former produces other atmospheric phenomena, such as parhelic circles, 22° halos, circumzenithal arcs, upper tangent arcs, and lower tangent arcs.

Wet and Wonderful

Tyler came dashing in the house today from school and said, "Can I go out and play in the snow?"

Mom: Um, it's RAINING Tyler

Tyler: Can I please, Can I, Can I, P-L-E-A-S-E?

Mom: (deep breath in and sigh) OK, but only if you HANG everything up when you get in. You're going to get pretty wet.

Tyler: OH, Mom, I WILL! (as he dashes out the door with Cole bounding behind him)

An hour later....

Mom comes home from errands and notices the landing full of sopping wet clothes and right next to them is the kids camera.

First I put all the clothes in the dryer, next I head to the computer to see what the wet camera reveals.

Who could be MAD after these sweet pictures emerge! :) They are only young once and I'm glad they are!

Cowboy Caviar

My Mom made this for a party we had last week in Fargo and everyone, including the KIDS LIKED this!

Some call it, bean salsa, some call it Norwegian MOC-Caviar, in any case, it has a SWEET, NOT SPICY flavor and it is tremendously GOOD for you, as well as addicting good! My dear hubby even liked it, an for you 30 somethings you know the saying, "If Mikey likes it..." well, you get the gist. Enjoy!



Cowboy Caviar

Marinade:
1C apple cider vinegar
1C vegetable oil
1C Sugar
1 1/2 Tbs H2O

Bring marinade to a boil until sugar dissolves, then set aside to cool completely.

In LARGE bowl combine:
1 C finely chopped red (or orange, yellow, green) bell pepper
1C finely chopped red onion

Drain and/or Rinse:
1 can black beans; rinsed & drained
2 cans black eyed peas
1 can chick peas
1 can pinto beans
1 can shoe peg corn
1 can mexicorn

Combine cooled marinade with all other ingredients. Chill for 24 hours. Serve with slotted spoon and tortilla chips, bagel chips, or pita chips.

Ham and Scalloped Potato Casserole

Ham and Scalloped Potato Casserole

1lb frozen shredded hash browns
1 can cream of chicken soup
2Tbs Butter
16oz Sour Cream
2 c Cooked Cubed Ham
1/2t Pepper
1/3 C Chopped Green Onion
3 C Cheddar Cheese Shredded

Topping
2 C Cornflakes
¼ C Melted Margarine

Combine first 8 ingredients and mix well. Place mixture in a greased 9x13 pan.
Combine last two ingredients and sprinkle over top. Bake Uncovered 1 hour at 350 Degrees or Cover tightly and Freeze. Cook Frozen Casserole 1 ½ -1 ¾ Hours loosely tented with foil.

Note: Mixing with your hands in large plastic tub or stock pot is best, cover your hands with gallon baggies or you may get frost bite!

Books a lotta!

Well, I can't say as I mind, but my two boys have become quite the book hounds!
We can't leave a Barns and Noble without an armful.  Luckily, this time Grandma Ivy and the Rife family saved the day by giving the kids a little cash towards their favorite hobby.

Whew! We got lucky this time....next time it's our turn....we're going to take a field trip to the library instead!

Frosted Banana Bars

Time to get rid of those brown bananas in the Freezer!



Frosted Banana Bars

1/2 cup butter or margarine, softened
1 1/2 cups sugar
2 eggs
8 ounces sour cream
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 medium ripe bananas, mashed, approximately 1 cup

In mixing bowl, cream butter and sugar. Add eggs, sour cream and vanilla. Combine flour, baking soda and salt.

Gradually add to creamed mixture. Stir in bananas. Spread into greased 15-by-10-inch baking pan.

Bake at 350 degrees for 20-25 minutes. Toothpick inserted near center comes out clean. Cool.

Frosting

8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 teaspoon vanilla
3 3/4 to 4 cups powder

Beat cream cheese, butter, vanilla. Gradually add powdered sugar. Frost banana bars. Store in refrigerator.

Yield: 3 to 4 dozen.
